Week One: Diet Report

all, right... a week into the raw diet and here's my report: 9 lbs. lost! hard to believe, i know! but the best recipe so far has to be the date nut torte... i'll post it here so you can all try it at home!

it's nice to actually lose weight... i have all this baby weight left to go... i'm shooting for 150. let's see if i can get there!

i really haven't been hungry on this diet so far... if i get a little munchy, i'll grab an apple, or carrot stick to satisfy that 'crunchy craving'. and as for that sweet tooth, the date nut torte fixes it better than chocolate! better, because i know i don't have to worry about eating it. with chocolate you always feel a twinge of guilt, knowing it's not good for your diet, or your figure, or your overall health. not so with the date nut torte! :)

anyway, here's that recipe, as given by Alissa Cohen in her book, Living on Live Food:

Date Nut Torte
Base of Torte:
2 cups raisins (no sugar added)
2 cups raw walnuts

Frosting:
1 cup dates (no sugar added)
1/2 lemon, juiced

For Base:

  1. In a food processor, combine raisins and walnuts and blend until well blended and moist. (This will take a few minutes and you may see it forming a ball. Just make sure the raisins come out looking like a fudgey mixture and are not still grainy.)
  2. Remove from processor and mold onto a plate in a round circle about 1.5 " thick.
For Frosting:
  1. In a food processor, combine dates and lemon juice until smooth and creamy.
  2. Spread the frosting on top of the torte.
Note: I like this served at room temperature, as the frosting and torte are a little sticky, but if you want a firmer texture that will be easier to slice, refrigerate it for a few hours.

My Personal Note: I, too, enjoy this at room temperature... i found that the base was fine at just 1" thick, and that there was waaay too much frosting, so i ate some plain. yummy! ...and make sure that the ingredients you use are no added sugars and raw walnuts, since that is the whole point: a completely guilt-free dessert!

i have had my first experience with detoxing... let's just say that my elimination process yesterday took me by surprise. since it's not pleasant to read or write about, you can call me for specifics, if you really want to know! lol!
